  • 1 lb. (4 sticks) unsalted butter, at room temperature
  • 1 lb. powdered sugar, sifted
  • 1 1/2 tsp. vanilla extract
  • 1 half-pint blueberries
  • 1 half-pint raspberries

Instructions for the cake:

  1. Preheat the oven to 350°F. Grease and flour a 17-by-12 1/2-inch sheet cake pan. (Note: this recipe can be halved for a smaller pan, as it makes a large amount.)
  2. In a mixing bowl, beat the butter and sugar together on high speed until light and fluffy, about a minute. Add the eggs, two at a time, mixing after each addition. Then, add the sour cream and vanilla extract.
  3. In a separate bowl, sift together the flour, cornstarch, kosher salt, and baking soda. With the mixer on low, gradually add the flour mixture to the butter and sugar mixture, one scoop at a time, mixing after each addition. Continue until just combined—do not overmix!
